The author is Mr. Koji Takeya, the chef-owner of "Delicious Bread Research Studio Tsu-moo-gii", a bakery in Sakura City, Chiba Prefecture, and also known as the author of "New Bread Making Basic Knowledge", published by Pan News Company Ltd., which is said to be the bible for bread makers.
The book is composed of three parts, "raw materials", "bread making knowledge", and "recipes".
